GRAPE PROSCIUTTO

FLATBREAD

INGREDIENTS

 

Flatbread

1/2 ounce yeast

1/4 cup white sugar

1/4 cup milk, warmed

1 egg

2 teaspoons salt

4 cups bread flour

1/2 cup whole wheat flour, light

1-1/4 cups water

To taste olive oil for brushing

Topping

1 cup crème fraiche

2 teaspoons lemon zest

1 tablespoon lemon juice

1 tablespoon olive oil

1 tablespoon chopped fresh tarragon

3 tablespoons chopped fresh chives

2 cups California grapes, halved

4 ounces prosciutto, sliced

As needed mint leaves

As needed coarse salt

NOTES

 

Ready-made flatbreads are widely available and can be substituted for the homemade version.

DIRECTIONS

 

For the flatbread: In a medium bowl, combine the yeast, sugar, and warm milk and let the yeast bloom. Mix in the rest of the ingredients and add the water; combine and knead thoroughly until you have a smooth dough. Set aside for 1 hour in a warm place. Divide the dough into six portions, and shape them in to tennis size balls. Brush a little olive oil on top of each dough ball and cover with a piece of cloth for at least 30 minutes. Flatten each ball of dough like a pancake by tossing and slapping with both hands; roll out to about 1/8 inch. Brush with olive oil and grill on both sides until cooked, about 4 minutes per side.

To finish the flatbreads: In a small bowl, combine the crème fraiche, lemon zest and juice, olive oil, and herbs. Stir to combine. Top each warm flatbread with a dollop of the herbed crème fraiche, a few slices of the prosciutto, and a handful of grapes. Garnish with a few mint leaves over the top, drizzle with olive oil, sprinkle with salt if desired, and serve.

GOAT CHEESE CROSTINIS

INGREDIENTS

 

2 cups quartered California grapes

2 teaspoons lemon juice

2 teaspoons honey

1 tablespoon chopped fresh thyme leaves

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1 tablespoon extra-virgin olive oil

16 thin diagonal slices baguette

8 ounces fresh goat cheese

Serves 8

 

DIRECTIONS

 

Combine the grapes, lemon, honey, thyme, salt, pepper and olive oil in a medium bowl. Spread each baguette slice with goat cheese and top with the grape mixture. Serve.
